It’s big and rustic with lovely earthy flavours typical of the region with distinct “cigar box” characters and smooth, velvety richness. This is the last remaining batch from the Hill and Jacobs project and is perfect drinking now.

Winery Tasting Notes

COLOUR

Lovely medium red with rich burgundy hues and subtle amber notes on the rim of the glass.

AROMA

The bouquet is distinct bottle aged Cabernet. Classic “cigar box” complexity with rich earthy herbs, ground coffee and intense dark chocolate. It’s luxurious, sophisticated and enticing.

Palate

The palate follows on from the bouquet with smoky tobacco and a pot-pourri of dried herbs, brandied pudding and rich dark chocolate flavours. Given time to breathe, the flavours build on the tongue becoming increasingly complex showing characters of spiced mead, licorice and roasted coffee beans. The finish is smooth and mellow with a lingering savoury aftertaste. The tannins have lost the gripping edge but retain a lovely textural feel that is ideally suited to refined cuisine.

Food Matching

A hearty steak pie or beef wellington or slow cooked roast are perfect partners with this deliciously mature Cabernet for main meal, or enjoy it with soft cheese, duck liver pate and roasted cashews to finish.

With ten years age the hard work has already been done. Simply open and allow to breathe, then sit back and indulge in a rare and wonderful experience.
