WINEMAKERS NOTES

The grapes were sourced from the Kalangadoo district, some 40 kilometres Southwest of Coonawarra, and is part of the Mount Gambier Geographical region. It is a district known for its dairy products, apples, cherries and potatoes. The climate is cool with the nearby coast delivering tempering afternoon sea breezes.

The 2019 vintage was extremely dry and very early. Harvesting was timed to give typical Sauvy cool climate delicate fruit characters. Lees stirring was used to fill out the mid palate and balance the natural crisp acidity of the grapes.

This wine was made for immediate drinking.Time in the bottle will see the yeastiness fade more into the background and the grassy elderberry notes will become more obvious. Short term cellaring, 1 to 2 years will result in toasty bottle age. But drink it before the fresh fruit fades.
