Colour

Deep, dark red, almost opaque.

Aroma

Concentrated creme de cassis and damson plums to the fore, with floral aromas in the background. Nutty oak complexed by barrelferment characters.

Palate

An opulent, flamboyant wine with definitive varietal characters: exaggerated blueberry/blackberry fruit, but without jamminess, layers of flavour, obvious but balanced oak and pronounced, chewy, ripe tannins. Impressively long in flavour, without reliance on alcohol. A wine to challenge the great 707s of 1996 and 1990.

Wine Background

Penfolds Bin 707 Cabernet Sauvignon is the Cabernet equivalent of Grange: ripe, intensely-flavoured fruit, fermented and matured in new American oak, and expressing the Penfolds policy of multi-vineyard, multi-region fruit-sourcing.

Named by an ex-Qantas marketing man, Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when the focus shifted to Bin 389) nor in 1981, 1995 or 2000 (when fruit of the required style and quality was not available). Big and long-lived, Bin 707 has a secure place among the ranks of Australia’s finest Cabernets. Packaged in laser-etched bottles from the 1997 vintage.

Winery Profile

The 1964 Bin 707 Cabernet Sauvignon was Penfolds’ first commercial release of a single cabernet-based wine. Today, Bin 707 is justifiably regarded as one of Australia’s most important cabernets.

The winemaking philosophy and barrel maturation of Bin 707 is almost identical to Grange. The Bin 707 style combines intense varietal definition with new American oak to produce wines of great richness, harmony and concentration.

Over the years the development of Bin 707 Cabernet Sauvignon has mirrored the advances in winemaking and viticulture and in this sense has served as a representation of progress and excellence within the industry.Bin 707 proudly bears the Penfolds stamp – displaying a fascinatingly complex marriage of ripe, concentrated cabernet fruit and 100% new American oak, forged together through partial barrel fermentation. It displays dark berried fruit, mocha and chocolate overtones, with warm spice notes.

Bin 707 is a medium to long term cellaring style of wine. It will comfortably gain stature and complexity across more than two decades in the bottle.

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
