The Viognier grapes were harvested in the cool of the night and transported to our Hunter Valley Winery. The grapes were processed with the absolute minimum of skin contact to reduce colour extraction The juice was fermented with yeast strain DV10 and on the completion of fermentation the wine received a light fining with skim milk to reduce tannin before being filtered.

Sourced from the Hunter Ridge Vineyard, in the lower Hunter Valley, our Viognier, grapes were harvested in the cool of the night. Whenever I come across viognier with alcohol in this lower zone, I am riddled with doubt. Picking early may serve to retain freshness, however this is not what good viognier is about. Rather, weight, aromatics and viscous phenolic texture. All lacking but for the exuberant scents of frangipani, apricot pith and ginger.- Ned Goodwin MW
