From the winemaker: “Margaret River is arguably Australia’s premier Cabernet Sauvignon grape growing region and our Embers Cabernet Sauvignon has been crafted in a manner that captures the best of the variety and its distinctive regional characters. Soft extraction techniques and cooler than normal ferment temperatures have resulted in a generously-fruited, fleshy wine with lovely lifted Cabernet Sauvignon aromatics. All batches were fermented separately before being transferred into older French oak barrels to undergo maturation for 12 months. After maturation in barrel the wine was blended, fined, filtered and then bottled.

James Halliday … “Flametree, owned by the Towner family (John, Liz, Rob and Annie), has had extraordinary success since its first vintage in 2007. The usual practice of planting a vineyard and then finding someone to make the wine was turned on its head: a state-of-the-art winery was built, and grape purchase agreements signed with growers in the region. Show success was topped by the winning of the Jimmy Watson Trophy with its 2007 Cabernet Merlot. If all this were not enough, Flametree secured the services of winemaker Cliff Royle.”

TASTING NOTES

The 2016 Embers Cabernet has lifted aromas of violets, ripe black fruits with chocolate and cedar notes. This year’s wine is a little more structured and finer than the more juicy 2015 vintage. Flavours of Satsuma plum, blackberry and chocolate underpin this years wine. Unashamedly medium bodied with soft fruit and a fine tannin structure.
