Biodynamic Wine.

Biodynamic is an agriculture based on principles developed by Rudolf Steiner at the beginning of the 20th century.

Biodynamic goes much farther than organic viticulture:

Less inputs used in the vineyard, including reducing the use of copper and sulphur;

The only preparations other than sulphur and copper are natural (e.g., plant infusions, silica, horn manure);

Little to no inputs used during vinification (e.g., little to no sulphur);

The biodynamic philosophy is similar to homeopathy: bring plant infusions to the vines to reinforce them and their natural defenses as a preventative solution;

Pay attention to the environment to identify the ideal moments to treat the vines (e.g., weather forecasts, observing life and lunar calendar);

Everything is natural, thus little to no risk to human beings (e.g., winegrowers, maîtres de chai, consumers);

A focus on the health and strength of the plant, soil as well as biodiversity;

A long-term vision, which gives the best attention to the vegetation, fruit, vines and wines!

As with the greatest chefs, for whom the secret to a great recipe are good ingredients, a good wine is first and foremost good grapes to us;

Preserving and valuing the earth’s balance. A terroir can’t create itself, which is why it is important to respect it, the earth and its quality in order to not impoverish it.

500P is horn manure, which develops the ground. It is a very nutritional compost that is applied to soil to stimulate the roots and nourish supportive underground life. Root growth is a major element to the health and quality of vines. Applying horn manure stimulates microbial life, which is required to provide natural reserves during winter to the vine stocks;

We also spread 501, also known as silica quartz, on foliage to help the plants capture light intensity, a source of heat and the moonlight. This supports photosynthesis.

Biodynamic farming allows us to combine forces of nature with the fingerprints of our wine-grower. This is our philosophy.

Winery Tasting Notes

Grape varieties: 50% Grenache, 20% Cinsault, 15% Clairette, 15% Syrah

Average age of the vines: 50 years

Soil type: lauzes

Total SO2: 40-60 mg/L

Vinification: we harvest at night to prevent oxidation and exposure to high temperatures followed by a long maceration period of 24 to 36 hours to extract the grapes' primary aromas. Fermentation is maintained at a temperature of 21°C (70°F), enabling the natural yeasts to fully express. Following racking, the fine lees are stirred to extract the glycerol needed to enhance this wine's fruit-filled aromas.

Colour: Deep pink colour

Nose: Soft red fruit aromas

Palate: Red fruit aromas, lingering and elegant taste with a well balanced roundness and acidity

Pairing: To be drank all year round, from aperitif to dessert. Pairs well with cooked fish, mediterranean and spicy food, tagine and dessert

Service: 14-16°C (57-60°F)

Whenever you buy wine there is an inherent risk, as wine is a perishable good regardless of whether it is sealed under cork or screwcap. At GraysOnline we minimise the risk to you by providing as much information as possible regarding the provenance of the wine we sell.

We take the time to individually inspect each bottle and photograph it so you know exactly what you are buying. All Private Cellar wine stored at GraysOnline is kept in a temperature controlled wine storage area. Any wine that doesn’t meet our quality standards will not be sold.

Wines displaying a 5 star designation are recognised as being of proven quality provenance, our team has verified that the wine has been stored correctly from original purchase straight from the winery, documentation, where possible, has been sighted and cellaring conditions have been inspected. This wine generally comes from only the best and most respected of wine collectors in Australia.

Wines displaying a 4 star designation have been cellared correctly as verified by the current owners. In general these wines have been purchased from retailers or traders and stored in cellared conditions from original purchase.

Wines displaying a 3 star designation are in good condition when we inspect and we are able to confirm some cellaring conditions but we are unable to verify all ownership and storage conditions of their history.

A wine displaying no stars doesn’t mean that there is a problem with the wine, it simply means that we have been unable to verify provenance, however a quality image is always available for the purchaser to make their own purchasing decisions.

Private Cellar wine is wine which has been stored for aging purposes in a Private Cellar.

Storing the wine and allowing it to age has the potential to improve the quality of the wine. While wine is perishable and capable of deteriorating, storing the wine can alter the aroma, colour, mouthfeel and taste of the wine in a way that may be more pleasing to the taster.
