For me Barossa Valley Semillon is a walk down memory lane to my early days of winemaking. It was the classic Barossa dry white. I’ve made this Semillon in the traditional style. Its lightly oaked, and has developed rich, luscious flavours and textural mouth-feel from seven years maturation. Its velvety smooth on the palate with a long creamy finish. A lovely and extremely rare discovery from the hidden Valley of Kings vineyard.

Winery Tasting Notes

COLOUR

The colour is deep straw with rich golden hues.

AROMA

The bouquet is refined and mellow with citrus rind, lemon grass and hints of orange marmalade. There’s also lanolin and a touch of buttery shortbread with creamy cashew and macadamia nuts.

PALATE

Fine, bottle aged Semillon from old Barossa vines is becoming increasingly rare with only a handful of vineyards remaining. Harvested early, this wine has high natural acidity for longevity and freshness. It’s had extended lees contact and partial malolactic fermentation to enhance the texture and structure as well as bring out the classic nuttiness and complex marmalade characters that will further develop over time.

FOOD MATCHING

This is a silky, dry white wine that can handle a wide repertoire of food partners. One of my summer favourites is crispy skin Atlantic salmon on the BBQ. Another great all-rounder is roast chicken with steamed green beans … or prawn dumplings, or tempura battered seafood. It has universal appeal.
