Appearance: The wine typically shows a deep, dark ruby to garnet color, hinting at its intensity and concentration.

Nose: On the nose, you can expect a rich bouquet of aromas. Look for pronounced notes of ripe blackcurrant (cassis), blackberry, and plum. These are often complemented by hints of cedar, tobacco, and earthy undertones. Subtle nuances of graphite or minerality might be present, adding depth. There may also be some secondary aromas of vanilla, chocolate, or coffee, depending on the influence of oak aging.

Palate: The taste will generally be bold and full-bodied. Expect a rich core of dark fruit flavors—blackberry, black cherry, and cassis. The tannins are likely to be firm but well-integrated, providing structure and a lingering finish. You might also detect flavors of dark chocolate, espresso, or a touch of leather, especially if the wine has had some time to develop. Balanced acidity will give the wine a good sense of freshness and help in pairing with various foods.

Finish: The finish is usually long and satisfying, with lingering notes of dark fruit, oak, and perhaps a hint of spice or pepper.

Celestial Bay is the result of Michael and Kim O’Brien’s long standing passion for wine which led them to the Margaret River region in search of a property suitable for viticulture. The perfect location was identified on Metricup Road, Wilyabrup. A former dairy farm, the site provided all the necessary requirements for successful viticulture – good soil, a moderate maritime climate and reliable rainfall.

The property was acquired in 1998 and site works, dams, irrigation and the first plantings of vines were completed in 1999 (a busy year!). Working with vineyard manager Sam Juniper, the O’Brien family has continually improved the vineyard, planting more vines in 2002.

Winemaker Bernard Abbott joined the team in late 2003 to begin production planning for his first full vintage in 2004. Bernard completed his BSc. in oenology in 1986. While most of his experience has been in the Margaret River region, he has spent time working in France. Bernard believes that combining modern winemaking with traditional techniques (hands on, small batches and constant attention to detail) produces the best wine. His range of experience ensures that our philosophy – “a passion for perfection”- is captured in each bottle. - James Halliday.
