Colour

The appearance is dark cherry red with subtle hints of maturity and viscous alcohol legs coating the glass.

Aroma

The bouquet is classic cabernet with initial fruit hints of dark plums and blackcurrants supported by an underlying complexity of violet petals, green herbs, savory olive tapenade and lightly toasted new oak.

Palate

Following through onto the palate are vegetative herbs, some ripe blackcurrants and toasty oak with hints of coconut and smoky tobacco. On the tongue the flavours unfold to reveal fleshy fruit, spiced pudding and licorice. It is firm rich and full with green herbal notes leading to a firm dry finish and lingering savory aftertaste. The tannins give a chewy sensation that finishes dry with hallmark dark chocolate smoothness.

Food Matching

From a hearty lamb casserole to a grand Beef Wellington this is a wine for complex flavoured meat dishes and rich sauces. Steak dishes from any cut make a great match and decanting prior to serving is recommended to allow it to open up at room temperature.

Cellaring Potential

With the benefit of screw cap closure and a cool stable environment this wine will cellar for over 8 years. It will gain complexity over time and develop a mild crust. Breathing for 30 minutes or more before pouring is recommended and decanting is advised as the wine ages.

Winery Profile

The “Reserve” label is kept for premium parcels of outstanding wine identified by Peter Jorgensen for their rich fruit intensity, complex flavours and structure combined with their long term aging ability. At the core of all “Reserve” wines is premium vineyard management and minimal intervention winemaking. The resulting wines are limited quantity batches of natural wines with minimal filtration or additives. They are wines that take time to evolve and are given extended cellar maturation to allow all elements to become integrated before bottling. The aging process will continue in bottle and this wine will develop a light crust over time.
