WINEMAKING

Destemmed and fermented at 25-30?°C over 8-12 days. Pressed and matured in vats and casks for 7 months. Racked and aerated regularly to soften the wine. Vineyards carefully selected for a balance of fruit weight and ripeness.

"A deepish, bright crimson red. Destemmed and matured in vats and casks for seven months. Immediately engaging with its fruit-driven nose redolent of dark fruits, lavender and sandalwood while the palate is juicy, with gently chewy tannins and good acidity. The bottle might imply that it's been designed to accompany wood-fired pizza, but I prefer the printed notes that came with the wine, which say, very Steve Webber-like, 'pairs bloody well with cassoulet'. I think it would too."

Winery Profile

De Bortoli Wines is a third generation family wine company established by Vittorio and Giuseppina De Bortoli in 1928. The couple emigrated to Australia from Northern Italy, from mountain villages at the foothills of the Italian Alps, near the historic town of Asolo.

Their son, the energetic and dynamic Deen De Bortoli, (b 1936 – d 2003) expanded and consolidated the business created by his parents. Deen's children established De Bortoli's reputation for premium wine including icon dessert wine Noble One and the Yarra Valley wines.

Italian family values passed down from Vittorio remain core values, there is a culture of hard work, generosity of spirit and of sharing good food, good wine and good times with family and friends.

It is starting to get chilly so everyone needs a couple of reds like this on hand for those nights when the temperatures plummet. This is a new addition to De Bortoli's barbecue/bistro Woodfired range, made from grenache grown on estate vineyards - and from a couple of growers in rural Victoria. It is bold and dark with blue/black fruit flavours and well judged oak, but finishes with a softness on the palate that makes it ideal for immediate enjoyment, preferably with a red meat dish, or perhaps with mushrooms. Great value for $22.
